Construit au 17e siècle dans un style encore médiéval, Sourniac présente une silhouette caractéristique des manoirs rustiques construits à l'époque par des familles récemment annoblies ; ces châteaux semblent des modèles réduits archaïques des grands châteaux médiévaux cantaliens. Une aile de communs construite au milieu du 18e siècle, fut détruite par un incendie en 1885 et remplacée en 1890 par une chapelle néo-romane dûe à l'architecte moulinois René Moreau.
