Overlooking the village of Saint-Jean-de-Buèges in the Hérault department, Baulx castle is a medieval fortress that began in the 12th century as a watchtower guarding the Buèges valley, later strengthened with a surrounding wall, a dry moat and a cistern. Left in ruins by the mid-18th century and long used as a stone quarry and then a sheepfold, the building has been under restoration since 1991, carried out under the supervision of a chief architect of historic monuments. Visitors today find a keep with rebuilt battlements, a main residential wing and two cleared towers, the result of work informed by archaeological digs carried out in the early 1990s.
