Château de Soubès stands in Soubès (Hérault), in the Occitanie region of France. What the French Ministry of Culture records

La partie haute du village est dominée par deux châteaux correspondant aux deux co-seigneuries de Soubès. La seigneurie principale remonterait au 10e siècle mais le "castrum" n'apparaît dans les textes qu'au milieu du 12e siècle, période à laquelle doit être commencé le château médiéval dont l'esentiel remonterait plutôt au 13e siècle. Cet édifice, appelé donjon, est établi sur un promontoire rocheux retaillé pour sa défense (au sous-sol, deux caves voûtées en berceau sont en partie creusées dans le tuf). Sa haute masse rectangulaire présente un appareil régulier avec des ouvertures d'allure romane, des corbeaux pour bretèche et, au sommet, pour un hourd. La façade sud a été transformée avec ouvertures du 18e siècle devant une terrasse en surplomb sur arcades, avec balustrade. A l'intérieur, l'étage noble possède une cheminée gothique double. Sous les combles, des baies en plein cintre murées et des éléments d'architecture témoignent de remaniements multiples.
